-VEGAN RECIPES-
Vegan cooking can be quick, easy and healthy!
- 2 to 3 bananas, well mashed
- with 2 tbls. oil (I prefer grapeseed)
- 3/4 cup cane sugar
- 2 cups flour
- 1 tsp. baking powder
- 1 tsp. baking soda
Mix until ingredients are well blended. Pour into well greased pan. Sometimes I like to place slices of banana on top of the dough mixture and/or sprinkle cinnamon or pumpkin pie spice on top. Bake at 375 degrees for about 20-30 minutes or until middle is well set.
Nothing beats a hot loaf of bread fresh from the oven!
-1 cup warm water
- 2 tbls. sugar
- 1 tbls. non-dairy milk (almond, soy, rice...)
- 2 tbls. oil
- 2 tsp. yeast
- 1 tsp. salt
Mix above ingredients, and let sit until the mixture starts to become frothy.
then slowly add
- 3 cups flour
and knead until you have a solid lump. Cover and let rise in a warm spot for 40 minutes. Punch down, then shape and set into well greased pan. Cover and let rise again for another 30 minutes. Bake at 350 degrees for about 30-35 minutes.
- 1 1/4 cup flour
- 1 1/4 cup corn meal
- 2 tsp. baking powder
-2 tbsp. maple syrup OR 1/4 cup sugar
- 1/2 cup non-dairy milk (almond, soy, rice...)
- 2 tbs oil
Blend all ingredients well and bake in a well greased pan at 400 degrees for about 25 minutes.
- 1 1/2 cups warm water
- 1 tbls. yeast

- 3 cups flour
- salt
Combine yeast, sugar and warm water, and let sit until mixture becomes frothy. Slowly add in flour and salt and knead into a lump. Let sit covered in a warm spot for about 20 minutes, then punch down, re-cover and let sit again for another 20-30 minutes.
After dough has properly risen, split into two lumps and set one of the two aside. The first half can be flattened and spread out onto a pan, or rolled out with a rolling pin (for thin crust) as desired. Before topping, bake for a few minutes until the crust 'sets' a bit and becomes slightly firm.
The remaining lump of dough can be broken into about six individual balls that can be rolled by hand into breadstick shapes, and placed on a well greased pan.
Bake for about 15-20 minutes at 400 degrees, or until well browned.
- 16oz pumpkin
- 3/4 cup oil OR applesauce
- 2 1/2 cups cane sugar
- 3 cups flour
- 2 apples chopped finely
- 2 tsp. salt
- 1 tsp. cinnamon
- 1 tsp clove
- 1/4 tsp. allspice
- 1/4 tsp. ginger
Mix ingredients well, and bake in two 9x5" well greased pans at 350 degrees for about 50 minutes.
- 2 cups flour
- 1 1/2 tsp baking powder
- 1 tsp salt
- 2 tsp vegetable oil
- 3/4 cup warm water
Mix well and knead until soft. Let sit for about 20 minutes and then divide into 8 ball shaped pieces. Let sit for another 20 minutes.
Flatten balls with hands, and then roll dough flat with rolling pin on well floured surface.
Cook on hot skillet for about 30 seconds or so for each side.
- 1 banana, well mashed

- 1/2 cup oatmeal
- 1 1/2 cup flour
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- vanilla to taste
Mix all ingredients well, and fry in 3" circles on well greased, hot pan, flipping as they brown. Top with maple syrup.

Don't throw those orange peels away! Make them into a tasty sweet, but tart candy- just be sure to use organic oranges so you are not eating pesticides sprayed on the peels.... Lemon peels can be substituted or mixed in as well.
- 5 organic orange (or lemon) peels
- 1 1/3 cup sugar
- 1/2 cup water+
Boil the peels in water for 20 minutes. Drain water.
Boil 1 cup sugar and 1/2 cup water to 230 degrees (soft-thread) state.
Add the peels to the mixture, and boil together for about 5 minutes.
Remove from heat- spread out to dry- Let dry overnight, or cook in oven on low to speed up the process. Once they are dried to a gummy sticky texture, roll in sugar.

- 2 cups molasses
- 1 cup sugar
- 1 tbls. vinegar (I prefer apple cider)
- 1/2 tsp. baking soda
Boil molasses and sugar with vinegar until mixture hardens when dropped in cold water. Remove from heat and stir in baking soda. Immediately pour into greased pan.
Let cool to touch, and then pull like taffy until hard. Twist into long ropes and cut off desired sized pieces.
- 2 cups soymilk
-1/2 cup cane sugar
- 5 tbls. non-GMO cornstarch
- 1/2 tsp. salt
- vanilla extract to taste
Heat all ingredients except the vanilla on stovetop on medium-low, stirring constantly until all ingredients dissolve together. Continue to cook and stir constantly, lowering heat if needed, until mixture starts to bubble. Remove from heat and allow to cool a bit before adding the vanilla extract. A banana can also be added for flavoring. Chill and serve. Makes two servings.
- 1 tbls. dried onions
- 2 tsp. chili powder.
- 1 1/2 tsp. salt
- 1 tsp garlic powder
- 1 tsp. non-GMO cornstarch
- 1 tsp cumin
- 1/2 tsp cayenne

- 1/3 cup Almonds (preferably raw)
- 2-3 cups water
If almonds have skins on them, boil in 1 cup water for 3 minutes, or until skins start to loosen and come off. Rub off skins and discard.
Blend almonds with 2 cups water in a blender, mixing occasionally until well blended and frothy. Strain (cheesecloth works well, but any fine strainer will do) and drink!
You can also add, salt, vanilla, sweetner, eggnog spices, or whatever you like to flavor this beverage.
- 1 cup rice
- 8 cups water
- 1 tsp. salt
Wash/rinse rice and add to a pan with 8 cups water. Bring to a boil. Lower heat and cook for 3 hours.
After 3 hours, add the salt, and then blend 1/2 rice mix and 1/2 water in a blender. You can, at this point, add 2 tbls. oil (I like hemp), 4 tbls. sweetner, vanilla......etc. as you like to taste.
